Sodium metabisulfite is an inorganic sulfite salt produced by reacting sodium carbonate with sulfur dioxide gas, used as an antioxidant, preservative, and bleaching agent (E223) that releases sulfur dioxide to inhibit microbial growth, prevent oxidation, and maintain color in acidic conditions.
